Alfalfa sprouts are no doubt the poster plant of sprouting. Like all microgreens, Alfalfa is super healthy and nutritious. In our opinion, Alfalfa is best eaten in sprout form as it is quite quick to germinate. It contains a bunch of good stuff including: protein, vitamin A, B1, B6, C, E, and K, calcium, potassium, carotene, iron, and zinc.
