As a familiar favourite, this legume has long been enjoyed for its earthy flavour and high levels of protein. In microgreen form, they have a gorgeous wreath like stem and leaves as well as a crunchy fibrous texture. Eaten as sprouts or as microgreens, chickpeas are a rich source of zinc, folate, protein, calcium and iron.
The goodness doesn't stop there, with chickpeas having many benefits for the planet, beyond just our own personal health. Did you know that chickpeas use one-tenth of the water of other animal proteins? Just some good food for thought!
