One cup of microgreens delivers the same nutrition, or more, as a full serve of vegetables. Microgreens are harvested just after sprouting, when their nutrient content is at its peak. Research shows they can contain 4–40x the vitamins of their mature counterparts. So, even though a cup weighs less, it packs a mighty punch. Genovese Basil

Nutrition: 23 kcal, 3.2g protein, low in fat
Vitamins: Rich in K, A, C; good source of minerals
Flavour: Sweet, peppery, minty, with clove & anise notes
Use: Salads, sauces, pestos, oils, preserved.
Fun Fact: The name “basil” means “kingly”; NASA tested it in space

Purple Radish

Nutrition: 43 kcal, 3.8g protein, 1.6g fibre per 100g.
Vitamins: C, K, folate; contains B6, calcium, magnesium.
Flavour: Bold, spicy, peppery.
