One cup of microgreens delivers the same nutrition, or more, as a full serve of vegetables. Microgreens are harvested just after sprouting, when their nutrient content is at its peak. Research shows they can contain 4–40x the vitamins of their mature counterparts. So, even though a cup weighs less, it packs a mighty punch. According to the Australian Dietary Guidelines, one serve of vegetables is equivalent to one cup of raw leafy greens or 75 grams of other vegetables. (Which one is easier to grow?)
